Chinese fried rice and the word healthy don't often go hand in hand. This recipe is so delicious it definitely satisfied the fried rice craving. I added chopped cooked chicken, one sunny side up egg to my portion for added protein. Also adding a little more corn and peas helps increase the carbohydrate content of this meal that is lacking slightly due to not having rice.
